VALENTINE’S DAY

Happy Monday!  How was your weekend?  If you celebrate Valentine’s Day did you do something this weekend or are you doing something tomorrow? If you have kids, are you scrambling to get something ready for them to take to school?  Are kids still doing Valentine’s cards or do they do something else?  Gosh, when I have kids I am not going to know the protocols.  What if I am an uncool mom?  Wahhhh. Ok, moving on!!!

As you may know I am obsessed with rice krispie treats.  Drizzle some chocolate on top and I am your biggest fan.  If you want to pour me a glass of wine too then you will never be able to get rid of meee…sorrrrrry, YOU GAVE ME WINE.  So I was getting a little bored of the regular ol’ treats and stumbled on something amazing.  The recipe is below and also linked here. These aren’t outrageously different from the original recipe but they are much “smoother” as every single piece of cereal is covered in marshmallow.  Oh and they are sweeter because of the vanilla!  But these are gooey deliciousness because of the extra added marshmallows.  I added some pink sprinkles to mine to join in on the Valentine’s Day festivities.  So if you need a last minute thing to bring, these are it!

Ingredients

  • 4 tablespoons of butter
  • 8 cups of mini marshmallows
  • 1 teaspoon of vanilla
  • 1 tablespoon of milk
  • 6 cups of Rice Krispie Cereal

Instructions

  1. Slowly melt the butter in a large pan on low heat.
  2. Once butter is melted, add vanilla and 6 cups of marshmallows. Melt the marshmallows slowly.
  3. Right before the marshmallows are fully melted, add milk and the other 2 cups of marshmallows. Stir until the added marshmallows are starting to melt. (we don’t want them fully melt so you will have a lumpy fluff)
  4. Add the Rice Krispie Cereal. Stir until the cereal is fully coated with the marshmallow fluff.
  5. Dump into an 8 x 11 greased dish. Use a greased spatula to spread out the treats and press down just a bit (you don’t want them to so compacted that they become rock hard).
  6. Allow to fully cool before cutting and serving.
